Chicken Cacciatore

Description

Tender chicken pieces in a velvety smooth tomato and olive sauce. Just divine!

Serves: 6

Ingredients

  • 1.5kg chicken pieces
  • ¼ cup seasoned flour
  • ¼ cup olive oil
  • 2 onions, peeled and chopped
  • 1 clove garlic, peeled and crushed
  • 140g tub Leggo’s Tomato Paste
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 400g can peeled whole tomatoes, undrained
  • ½ cup dry white wine
  • ½ cup water
  • 1 teaspoon chicken stock powder
  • 10-12 pitted black olives

Instructions

Step 1

Lightly coat chicken pieces in seasoned flour.

Step 2

Heat olive oil in a large saucepan, add chicken pieces and brown on all sides, remove and set aside.

Step 3

Add onions and garlic to pan and cook for 1 minute, stir in Leggo’s Tomato Paste, oregano, bay leaf, tomatoes, wine, water and stock powder, stirring well.

Step 4

Return chicken pieces to the pan, cover and simmer for 1 hour or until cooked, stirring occasionally during cooking. Add olives for the last 10 minutes of cooking time. Remove bay leaf before serving.

Tasty Tip!

Seasoned flour is plain flour with the addition of salt and pepper.
