Green Beans With Tomato & Parmesan

An impressive side dish of green beans with a tomato and pesto sauce.

Serves: 4

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, peeled and sliced
  • 2 tablespoons Leggo’s Tomato Paste - Garlic and Herb
  • 1 large tomato, finely diced
  • 1 tablespoon basil pesto
  • ¼ cup vegetable stock
  • 1 tablespoon lemon juice
  • 500g green beans, trimmed and blanched
  • 75g toasted pinenuts for garnish
  • Shaved parmesan cheese for garnish

Instructions

Step 1

Heat oil in a large frying pan, add garlic and cook for 1 minute.

Step 2

Add Leggo’s Tomato Paste, diced tomato and pesto and cook on low heat until tomatoes are soft.

Step 3

Stir in stock, lemon juice and beans and simmer for 4 minutes or until beans have warmed through.

Step 4

To serve, place beans on a platter, sprinkle with pinenuts and shaved parmesan cheese.

Tasty Tip!

Pinenuts can be replaced with slivered almonds.
