Mediterranean Chickpea Salad

A crisp fresh salad with witlof, red capsicum, avocado, cucumber and olives.

Ingredients

  • 2 witlof, leaves separated
  • 1 small red capsicum de-seeded and cut into thin strips
  • 1 avocado, cut into thin slices
  • ½ continental cucumber, chopped
  • 400g can chick peas, drained
  • 150g rocket leaves
  • ½ cup fresh basil leaves, torn
  • ½ cup kalamata olives, pitted
  • Dressing:
  • 3 tablespoons Leggo’s Tomato Paste
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • ½ cup olive oil

Instructions

Step 1

Arrange salad ingredients in a serving bowl.

Step 2

In a small bowl whisk together the dressing ingredients. Season with salt and pepper and drizzle dressing over salad just before serving.

Tasty Tip!

Marinated or oven roasted red capsicum adds another flavour dimension to this salad.
