Combine flour and salt in a large bowl and make a well in the centre. In a separate bowl, whisk together egg, olive oil and milk. Stir into dry ingredients until it forms a soft dough. Turn mixture onto a floured surface and knead lightly. Divide the dough in half and roll out to fit 2 x 25cm floured pizza trays. Lightly spray with oil.
Heat oil in a frypan and cook garlic, onion and mince for 5 minutes or until mince is browned. Stir in Leggo’s Tomato Paste, cumin, coriander, and chilli and continue to cook for a further 1-2 minutes. Remove from heat and allow to cool slightly.
Spoon lamb mixture evenly over each pizza and sprinkle with pinenuts. Bake in a preheated oven at 200°C for 12-15 minutes or until golden brown. Serve dolloped with Tzatziki and sprinkled with mint leaves.
