Roasted Vegetable and Goats Cheese Pizza

A delicious gourmet pizza that the whole family will love

Makes: 2 pizzas

Ingredients

  • 200g peeled and thinly sliced butternut pumpkin
  • 1 red capsicum, halved and seeds removed
  • 1 small zucchini, sliced
  • 1 small red onion, cut into wedges
  • Oil spray
  • 2 rectangle store bought pizza bases
  • 2 x 50g sachets Leggo’s Pizza Sauce
  • 100g mozzarella cheese, sliced
  • 100g marinated goat cheese, for serving
  • 2 tablespoons pine nuts

Instructions

Step 1

Place pumpkin, capsicum (cut side down), zucchini and onion on a baking paper lined tray. Spray with oil and season to taste. Place in a preheated oven at 200°C and cook for 15 minutes or until browned.

Step 2

Meanwhile, place pizza bases on lightly oiled baking trays, spread with Leggo’s Pizza Sauce and top with mozzarella cheese.

Step 3

Remove vegetables from oven and allow to cool slightly. Remove skin from capsicum and discard. Cut capsicum into thin slices.

Step 4

Arrange roasted vegetables on pizza bases and top with pine nuts. Bake in a preheated oven at 200°C for 10-15 minutes. Serve sprinkled with goat cheese.

Tasty Tip!

Depending on how the vegetables are cut, the pumpkin and capsicum may take longer to roast in the oven than the zucchini and onion.
