Baked Italian Pork Fillet

Description

Flavoursome tender pork fillets wrapped in prosciutto.

Prep time: 10 mins

Cook time: 30 mins

Serves: 4

Ingredients

  • 2 x 350g pork fillets
  • ¼ cup Leggo’s Tomato Paste
  • 1 tablespoon seeded mustard
  • 4 thin slices prosciutto
  • 1 tablespoon butter
  • ½ cup fresh sage leaves

Instructions

Step 1

Place pork fillets into a small oiled baking dish. Combine Leggo’s Tomato Paste with seeded mustard and spread over pork.

Step 2

Overlap prosciutto strips over pork completely covering top.

Step 3

Bake in a preheated oven at 180°C for 30 minutes. Allow to rest for 5 minutes.

Step 4

Meanwhile, heat butter in a pan, add sage leaves and cook for 30 seconds or until leaves become crisp. Cut pork into slices and garnish with fried sage leaves.

Tasty Tip!

Additional sage leaves can be placed under the prosciutto to impart flavour to the pork.
