Instructions
Step 1
Heat oil in a frying pan and brown meat well on all sides. Remove to an oven-proof casserole or baking dish.
Step 2
Using the same pan, cook shallots, carrots and potatoes for 2-3 minutes. Remove and place evenly around the meat.
Step 3
Add Leggo’s Tomato Paste to frying pan and cook for 2 minutes. Stir in red wine and reduce by half, add remaining ingredients. Pour tomato mixture over browned meat and cover dish tightly with a lid or foil.
Step 4
Bake in a preheated oven at 180°C for 2 hours removing foil halfway through cooking time, turning meat and vegetables.
