Heat oil in a frypan and brown beef well on all sides. Remove to a baking dish.
Add Leggo’s Tomato Paste to frypan and cook for 2 minutes. Stir in red wine and reduce by half. Stir in bay leaves, thyme and stock. Pour tomato mixture over browned meat and cover dish tightly with a lid or foil.
Bake in a preheated oven at 180°C for 2 hours. After the first hour of cooking, remove foil and place vegetables around the beef. Return to oven and continue cooking.
Remove from oven and allow meat to rest for 15-20 minutes before slicing.
