Cook pasta following packet directions. Drain and return to hot saucepan.
Meanwhile, heat oil in a large frypan, add garlic and onion and cook for 2 minutes or until onions are tender. Add sausage pieces and cook for 3-4 minutes or until browned. Add red wine and reduce by half.
Stir in Leggo’s Tomato Paste, diced tomatoes, sugar and season to taste. Simmer uncovered over a low heat for 5 minutes.
Add sausage mixture to cooked pasta and toss gently. Spoon into a deep baking dish. Top with mozzarella and parmesan cheese and bake in a preheated oven at 180°C for 15 minutes or until golden brown.
