Instructions
Step 1
Cook pasta in a large saucepan of boiling water until al dente.
Step 2
Meanwhile heat oil in a large frying pan, add garlic and onion and cook for 2 minutes until onions are tender. Add sausage pieces and cook for 3-4 minutes until browned. Add red wine and reduce by half.
Step 3
Stir in Leggo’s Tomato Paste, diced tomatoes, sugar and season to taste. Simmer uncovered on a low heat for 5 minutes.
Step 4
Drain pasta and return to hot pan, add sausage mixture tossing gently and spoon into a deep oven-proof dish. Top with mozzarella and parmesan cheese and bake in a preheated oven at 180°C for 20 minutes or until golden brown.
