Italian Tomato Soup


Leggo’s Tomato Paste adds a subtle yet rich tone to this simplest of soups

Serves: 4


  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon Leggo’s Pesto – Traditional Basil
  • Pinch dried oregano
  • ½ cup Leggo’s Tomato Paste
  • 800g can peeled whole tomatoes
  • 1 litre water
  • Pinch sugar
  • 2 cups fresh breadcrumbs
  • Olive oil, for drizzling
  • Basil leaves, for garnish


Step 1

Heat oil in a saucepan, sauté onion and garlic for 2-3 minutes. Add Leggo’s Pesto and oregano. Season to taste. Continue to cook for a further 1 minute, stirring continuously.

Step 2

Add Leggo’s Tomato Paste and cook, stirring for 3 minutes. Add tomatoes, water and sugar, cover and simmer for 30 minutes.

Step 3

Puree and stir in fresh breadcrumbs. Serve drizzled with oil and garnish with basil.

Tasty Tip!

Substitute Leggo’s Traditional Basil Pesto for Leggo’s Sundried Tomato Pesto.
