Spaghetti Marinara

Description

A traditional Italian pasta dish with fresh seafood in a tomato based sauce served with al dente spaghetti.

Serves: 4

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, peeled and chopped
  • 2-3 cloves garlic, peeled and crushed
  • ½ teaspoon finely chopped red chilli
  • 140g tub Leggo’s Tomato Paste
  • 400g can diced tomatoes
  • ¼ cup dry white wine
  • ¼ teaspoon sugar
  • 750g good quality seafood marinara mix
  • 1 tablespoon chopped fresh basil leaves
  • Cooked spaghetti for serving

Instructions

Step 1

Heat olive oil in a large saucepan, add onion, garlic and chilli and cook for 2 minutes.

Step 2

Stir in Leggo’s Tomato Paste, tomatoes, wine and sugar, simmer uncovered for 5 minutes.

Step 3

Add the seafood and simmer covered for 5 minutes or until fish is cooked. Stir in basil, season to taste and serve over hot spaghetti.

Tasty Tip!

As mussels in their shell are not usually part of a marinara mix extra may be purchased for garnish, making sure the shells are cleaned and have the beard removed before cooking. Only serve mussels where the shell has opened up.
