Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 390g jar Leggo’s Tomato & Umami Papi Chilli Oil Pasta Sauce
- 200g pappardelle pasta
- 90g ball fresh mozzarella, torn
- ½ cup fresh basil leaves, for garnish
Method
STEP 1Heat oil in a non stick frypan over medium heat. Add onion and sauté until softened. Add Leggo's Gourmet Pasta Sauce. Simmer until warmed through.
STEP 2
Meanwhile, cook pasta following packet directions and drain, reserving ½ cup of pasta water.
STEP 3
Toss pasta through sauce. Add pasta water to loosen sauce, if required.
STEP 4
Serve pasta topped with mozzarella and fresh basil leaves.
Tips
Add a little pasta water to loosen the sauce, if desired.
