Ingredients
- 200g penne pasta
- 1 tablespoon olive oil
- 1 red onion, thinly sliced
- 2-3 cloves garlic, crushed
- 400g can Leggo's Diced Tomatoes
- ½ -1 teaspoon chilli flakes, plus extra for serving if desired
- 1 tablespoon chopped fresh basil leaves, plus extra for garnish
- Finely grated parmesan cheese, for serving
Method
STEP 1Cook pasta following packet directions. Drain and reserve ½ cup pasta water.
STEP 2
Meanwhile, heat oil in a large frypan over medium heat. Cook onion for 8-10 minutes or until softened and not coloured. Stir in garlic for 1 minute or until fragrant. Add Leggo's Tomatoes and chilli flakes, cover and cook for 10 minutes.
STEP 3
Toss cooked pasta, basil and desired amount of pasta cooking water through sauce. Sprinkle with extra basil leaves and desired amount of extra chilli flakes. Serve with parmesan.
Tips
Cook chopped bacon or chopped chorizo before sautéing the onion in STEP 1 for added flavour.
