Ingredients
- 200g spaghetti
- 1 tablespoon olive oil
- 300g seafood marinara mix
- 2 cloves garlic, crushed
- 390g jar Leggo's Tomato & Adelaide Hills Chardonnay Pasta Sauce
- Finely grated zest and juice of 1 lemon
- 2 tablespoons finely chopped fresh herbs (parsley & oregano)
- Lemon wedges, for serving
Method
STEP 1Cook pasta following packet directions. Drain, reserving ½ cup pasta cooking water and keep warm.
STEP 2
Meanwhile, heat oil in a large non stick frypan over high heat. Add marinara mix and cook for 1 minute. Add garlic and cook for a further 30 seconds or until fragrant. Transfer to a bowl.
STEP 3
Reduce heat to medium, add Leggo’s Gourmet Pasta Sauce to the same frypan and bring to a simmer. Cook for 2 minutes.
STEP 4
Add pasta, seafood, lemon zest and juice, and 1 tablespoon herbs. Gently toss to combine. Loosen sauce with reserved pasta water if desired.
STEP 5
Serve sprinkled with remaining herbs and lemon wedges on the side.
Tips
Add 1 small thinly sliced fennel bulb in STEP 2.
